Venison Nacho Casserole
Thought we'd include this recipe for those of
you who are deer hunting this month. It's a
recipe that can be made with venison or you can
substitute ground turkey or lean ground beef. It
takes about 40 minutes to prepare and cook.
Makes about 8 servings.
Ingredients:
1lb Ground Venison (Turkey or Beef)
1.5 cup Salsa
3/4 cup light Mayonnaise
3 ounces crushed baked Tortilla Chips
1 tablespoon Chili Powder
1 cup shredded, low fat Colby Jack Cheese
2/3 cup frozen Corn Kernels
Directions:
* Preheat
oven to 350.
* Brown meat, drain.
* Stir in salsa, corn, mayonnaise, and chili
powder.
* Place crushed tortilla chips in bottom of 9x13
dish.
* Layer meat mixture on top of chips.
* Top with cheese.
* Bake 20 minutes or until thoroughly heated
through.
* Top with lettuce and chopped tomato if
desired. |
