Sesame Oat Cookies

Servings: This should make about 36 cookies. Pack 'em in a bag and take 'em kayaking.

Ingredients:
1 cup rolled oats
1 cup whole wheat pastry flour
1/4 teaspoon sea salt
1 teaspoon baking powder
1/4 cup tahini (see Note: below)
1/4 cup sesame oil
1 teaspoon vanilla extract
2 teaspoons cornstarch
1/2 cup maple syrup
2 tablespoons sesame seeds


Directions:
* Preheat oven to 350 degrees F
*
Grind oats in blender until coarse.
* Meanwhile; In a large bowl combine flour, salt and baking powder.
* Add ground oats to flour mixture (no need to clean out oat crumbs).
* Place the tahini, sesame oil, vanilla, cornstarch and maple syrup in a blender and process until smooth.
* Add to flour and oat mixture and stir to combine.
* Drop by tablespoons full onto a greased baking sheet.
* Sprinkle with sesame seeds.
* Bake for 10 to 12 minutes until golden brown and delicious.


NOTE
:
Tahini is basically ground up sesame seeds that come in a can or bottle. It is very similar to peanut butter (chucky version isn't available). Most grocery stores carry it.
