Cucumber Lemonade
We were in line at the grocery store talking to a
friend. He had lemons, cucumbers, sugar and two 2-quart
containers.
I thought he must be making lemonade and I was right!
But it wasn’t what I was thinking … he told us he was
making Cucumber Lemonade. According to our friend this
is “The best lemonade and we should give it a try.” We
asked him for the recipe and here it is for you to try,
too.
Ingredients:
(Makes two quarts.)
10 to 12 medium to large Lemons
4 to 6 medium to large Cucumbers
Sugar to taste
Water
Mint, optional
NOTE: Options - before cutting up the lemons
...
1. You may want to add some pizazz by
cutting one lemon into slices to put in the pitcher.
2. Save some lemon peels to make lemon zest
as a garnish.
3. Otherwise, use all the lemons for the
juice.
Directions:
* Squeeze lemons into a large bowl.
* Use a lemon sleeve or cheesecloth to capture
seeds.
* Peel and slice cucumbers and place in lemon
juice.
* Set aside for at least two hours. (Can be
prepared overnight to maximize time.)
* Add sugar to water, stirring thoroughly.
* Strain cucumber/lemon mixture if you don’t
want pulp in your lemonade. Drain the mixture if
you
enjoy some pulp.
* Mix lemon juice with sugar water.
* Discard cucumbers.
* Garnish with lemon slices and/or lemon zest.
* Add a sprig of mint (optional), and viola!
