Banana Nut Energy Bars

Here's a great bar that makes a perfect paddling or trail snack. They are also excellent for breakfast. These energy bars have a chewy texture that falls in between a cake or cookie and a hard crunchy granola bar.

Yield:
12 servings (serving size: 1 bar) 

Ingredients:
1/2  cup mashed ripe Banana
1/3  cup packed Brown Sugar
1/4  cup Honey
1  tablespoon Vegetable Oil
1/2  teaspoon Vanilla Extract
1  large Egg
1/2  cup All-Purpose Flour
1 1/4  cups Multigrain Hot Cereal (such as Quaker) or quick-cooking oats
1/4  cup  chopped Pecans
1/2  teaspoon  Salt
Cooking Spray

Directions:
* Preheat oven to 350°
* Beat the first 6 ingredients at medium speed of a mixer until blended.
* Lightly spoon the flour into a dry measuring cup, and level with a knife.
* Gradually add the flour, cereal, pecans, and salt to the banana mixture, stirring until well blended.
* Spoon mixture into an 8-inch square-baking pan coated with cooking spray.
* Bake at 350° for 25 minutes.
* Cool completely on a wire rack.
